SERICIS
—— BOBAL
D.O. UTIEL - REQUENA
Aging potential: A wine with structure and capacity for evolution, suitable for enjoying now or cellaring over the next 6–8 years, during which it will develop greater tertiary complexity.
Optimal serving temperature: Between 16ºC and 18ºC. Decanting at least one hour before serving is recommended to enhance its aromatic expression.
Volumen: 75 cl
Technical Data Sheet
Vineyard Characteristics
Sourced from low-yielding old vines located within the Protected Designation of Origin Utiel-Requena, Sericis Bobal is born in a continental climate with marked Mediterranean influence. The pronounced temperature variations between day and night, together with an average annual temperature of around 13ºC, promote balanced ripening, aromatic concentration, and excellent tannic structure.
The limestone-clay soils provide character, depth, and a strong sense of place to this Bobal, an emblematic native variety of Utiel-Requena, cultivated with care and precision to express its full qualitative potential.
Winemaking
Made exclusively from selected grapes from low-yielding old vines, the wine undergoes destemming and gentle crushing, followed by extended maceration at controlled temperature and a pumping-over regime designed to optimize the extraction of color, aromas, and structure.
Malolactic fermentation refines its profile, after which the wine is aged in oak barrels for a minimum of eight months, adding complexity, elegance, and subtle spicy notes.
This wine is suitable for vegetarians and vegans.
Tasting Notes
On the eye, it displays an intense cherry-red color with a slight brick-hued rim, clean and deep.
On the nose, it is complex and enveloping, with notes of ripe forest fruits integrated over a balsamic background, accompanied by hints of toffee and vanilla derived from its oak aging.
On the palate, it is fresh, dense, and fleshy, with round, well-integrated tannins. The structure is balanced, with a broad and persistent mid-palate that culminates in a very long finish, reflecting the power and elegance of old-vine Bobal.

——MALVASÍA
——MALVASÍA
D.O. VALENCIA
We do not consider decanting necessary, although it may benefit from a few minutes of aeration in the glass to fully unfold its aromatic complexity.
Aging potential: A wine with structure and capacity for evolution, recommended to enjoy now or cellar for the next 4–6 years.
Optimal serving temperature: Between 8ºC and 10ºC.
Volume: 75 cl
Technical Sheet
Sourced from a single vineyard plot located in the western part of the province of Valencia, between the towns of Fuenterrobles and Utiel, within the Protected Designation of Origin Valencia, Cañada La Torre Malvasía is grown at 1,090 meters above sea level, in an area with a strong continental identity and Mediterranean influence.
The vineyard, planted in 1995, comprises 2 hectares of sandy-loam soils. The vines are trained on a trellis system with double Royat cordon pruning and are situated on an estate featuring a gentle central depression, surrounded by almond and oak trees, which promotes a natural ecological balance.
The climate has an average annual temperature of 14ºC and a thermal amplitude exceeding 17ºC, with long, cold winters, relatively short summers, and autumns marked by a pronounced drop in temperature. Annual rainfall averages around 450 mm, conditions that allow for slow and balanced ripening of the Malvasía grape.
Winemaking
Made 100% from Malvasía, this wine begins with a careful selection of the finest grapes, hand-harvested in the early hours of the day in 15 kg crates to preserve their integrity.
The grapes undergo a 12-hour cold pre-fermentative maceration to enhance aromatic extraction. Fermentation takes place with native yeasts at 18ºC over 20 days in stainless steel tanks, where the wine remains on its lees for six months to gain volume and complexity.
It then undergoes aging in a 5,000-liter French oak foudre for four months prior to bottling, refining its structure and adding elegance without masking the varietal expression.
Tasting Notes
On the eye, it shows an attractive yellow color with greenish highlights, clean and bright.
On the nose, it is highly intense and complex, revealing a wide range of ripe fruit aromas such as lychee, peach, and red apple, accompanied by delicate floral notes of orange blossom and an elegant hint of nuts.
On the palate, it is flavorful, aromatic, and unctuous, balancing freshness and structure. The well-integrated acidity provides tension and verticality, while the finish is long, enveloping, and persistent, leaving an elegant and distinctly Mediterranean impression.

—— MERSEGUERA
D.O. UTIEL-REQUENA
A very aromatic white wine with great personality.
Aging potential: A wine designed to be enjoyed in its youth, although it can evolve favorably in bottle for 2–3 years, during which it will gain nuance and complexity.
Optimal serving temperature: Between 8ºC and 10ºC.
Volume: 75 cl
Technical Data sheet
Vineyard Characteristics
The Merseguera comes from selected vineyards within the Protected Designation of Origin Utiel-Requena, located at medium altitudes that promote a significant temperature range between day and night. This thermal contrast allows for slow, gradual ripening, preserving the natural acidity and enhancing the aromatic expression of the variety.
The soils, predominantly limestone in composition with a loamy texture, provide finesse and a marked mineral character. Harvesting takes place at the optimal point of ripeness, with careful picking to preserve the integrity of the fruit and ensure it arrives at the winery in perfect condition.
Winemaking
After gentle pressing, the must undergoes a cold pre-fermentative maceration to extract its full aromatic potential. Alcoholic fermentation is carried out at controlled temperatures to preserve the freshness and varietal purity of Merseguera.
Once fermentation is complete, the wine remains on its fine lees for a determined period, adding volume, complexity, and a more enveloping texture on the palate. It is then stabilized and bottled to maintain its Mediterranean expression intact.
Tasting Notes
On the nose, intense aromas of fresh white fruit stand out, such as pear and apple, accompanied by delicate floral notes and citrus nuances reminiscent of lemon peel and grapefruit. Subtle herbaceous touches and a mineral background complete a clean and elegant profile.
On the palate, it is fresh, balanced, and supported by lively acidity that brings vibrancy. The texture is silky, with a pleasant and slightly creamy mouthfeel thanks to lees aging. The finish is persistent, with fruity and citrus retronasal notes that reinforce its vibrant character and Mediterranean identity.

FINCA EL SERRANO
—— MONASTRELL
D.O. ALICANTE
Aging potential: A structured wine with good capacity for bottle evolution, recommended for enjoyment now or cellaring over the next 6–10 years.
Optimal serving temperature: Between 16ºC and 18ºC. Decanting approximately one hour before serving is advised to encourage its aromatic opening.
TECHNICAL DATA SHEET
Vineyard Characteristics
Sourced from a single 5-hectare vineyard planted in 1980, Finca El Serrano is located within the Protected Designation of Origin Alicante, on Spain’s eastern coast, where the vines benefit from a warm climate with clear Mediterranean influence. In the higher inland areas, the character becomes more continental, providing thermal contrast and promoting balanced ripening.
The limestone, poor soils with an ideal texture for extreme vine cultivation naturally limit vigor and concentrate varietal expression. With a yield of 45 hl/ha, the vineyard produces grapes of great intensity and balance, faithfully reflecting their environment.
Winemaking
Made 100% from Monastrell, this wine is guided by a philosophy of minimal intervention in both vineyard and winery, seeking to authentically express the character of its terroir.
Harvest took place on October 2, 2022. Fermentation occurred at 25ºC using native yeasts present on the grape skins, accompanied by gentle pumping-overs for delicate extraction. After 30 days of maceration, the wine was pressed.
Malolactic fermentation took place in stainless steel tanks. The wine was then racked into French oak foudres, where it aged for six months prior to bottling, refining its structure and adding complexity.
Tasting Notes
On the eye, it shows an intense red color with attractive purple hues, clean and deep.
On the nose, it displays high aromatic intensity, dominated by notes of very ripe fruit, seamlessly integrated over an elegant background of toasted oak that provides depth and character.
On the palate, it is fleshy and complex, with a rich and enveloping mouthfeel. The tannins are balanced and well integrated, supporting a firm structure that culminates in a persistent finish with toasted nuances.
With an alcohol content of 14.5% vol. and a pH of 3.6, it presents itself as a powerful, structured wine that remains true to the Mediterranean identity of Monastrell.
